It's a great book specifically dedicated to the baking of cookies and includes lots of pictures (which I love). I plan to bake them all...starting with my favourites of course!
Lemon Chewies (I adjusted a few things on the recipe)
2 C all purpose flour
1 tsp baking powder
1 teaspoon kosher salt (I used regular table, kosher seems too gritty)
1/2 C unsalted butter
1/2 C sugar
1 tsp lemon zest
1 egg
1/2 C honey
Sift together your dry ingredients, meanwhile in your mixer cream the butter and sugar together until completely incorporated, if you can see sugar granules, it's not ready. Add in the lemon zest. In a separate bowl mix together the egg and honey and add to your sugar and butter mixture. Slowly add in your dry ingredients making sure everything is mixed in before adding the next bit. Mix until everything looks smooth. Scoop up tablespoon sized balls of batter and roll them into balls and place on a lightly greased cookie sheet. Flatten them with the palm of your hand. (don't worry they don't spread out very much). Bake at 350 F for 10-12 minutes until the bottoms are golden and delicious!
You can add an optional glaze. A simple mixture of water and icing sugar and I like to add a little bit of vanilla extract to balance out the flavour so it's not too sugary. Start with 1 cup of icing sugar and 1 tablespoon of water, whisking until completely blended. If too thin add icing sugar, if too thick add water. Make sure to add only in small bits otherwise you'll be there all day. Drizzle over your cooled cookies and let dry.
